Hi Wee,

If you are waiting to see a specialist regarding celiac disease

they recommend that you do not start a gluten free diet until AFTER an accurate

diagnosis can be made. If you are a celiac a strict gluten free diet must be

followed for life and it is surprising how many hidden sources of gluten there

are in things like stocks, soups, seasonings, dried spices, drinks, coffee etc.

so you don't want to have to go down this path unless you need to. In our home

we keep separate chopping boards, toasters, knives etc to avoid the issue of

cross contamination. Going wheat free is much easier than going gluten free.

I'm in Australia but I imagine the US have an association for

celiacs that could give you assistance and more information. Our association

prints out booklets with suitable foods, brands and restaurants each year and

hopefully there is something similar within the US as it makes shopping so much

easier. With the issues of malabsorption relating to the celiac disease I was

told that it would be quite difficult to manage a vegetarian, gluten free diet

but with the help of a dietician I've been pleased with the results.

Good Luck with the doctors appointment.

Trish

I wanna make a list of gluten free food so that I don't buy any food that is

not gluten free.

Maybe you guys can help me? <smile>

Best Wishes,

Wee
