Guest guest Posted May 18, 2006 Report Share Posted May 18, 2006 Brown Rice with Currants My youngests favorite. 1/2 cup currants 2 tbsps. orange juice 1 tsp. butter 1 onion, chopped 2 cups brown rice 4 cups vegetable broth 1 tsp. dried basil leaves salt and pepper to taste Soak currants in orange juice and set aside. In heavy saucepan, melt butter over medium heat; stir in onion and cook, stirring until tender. Add rice and stir to mix well. Bring stock to boil. Pour over rice; stir in basil, salt and pepper to taste. Simmer, covered, until water has been absorbed, about 40 minutes. Stir in currants and orange juice. Serves 8.
