Guest guest Posted May 17, 2006 Report Share Posted May 17, 2006 I really dig this scramble tofu recipe from " Cafe Max and Rosie's Vegetarian Cooking with Health and Spirit. Last weekend, I had some leftover tofu and used this recipe as a guide. Since the tofu wasn't a whole package I just used ingredients in a similiar ratio. I'm pretty sure I went light on the tamari. (You can always add more salt later.) No scallions either, but it was still tasty. Picture on my blog if you are interested... http://vegchic.blogspot.com/ Scrambled Tofu Serves 4 to 6 2-3 Tbl of light sesame oil 1 yellion onion chopped 2 cloves of finely chopped garlic 2 scallions, whites and greens separated and thinly sliced 6 button mushrooms thinly sliced 2 pounds of firm tofu, drained and mashed 1/4 cup of tamari 1/2 tsp of dried oregano 1/2 tsp turmeric salt and pepper Heat oil in skillet over high heat. Add onion, garlic, scallion whites and saute for 8-10 min until onion is translucent. Add mushrooms, tofu, tamari, oregano, turmeric and continue to saute over medium heat, stirring frequently, for 5 min or until tofu is yellow and scrambled!
