Jalapeno Red Bean Burgers repost of a great BBQ grilling burger

My family loves these on the coals.

 

Jalapeno Red Bean Burgers 1 tsp. olive oil 1/2 cup onions, minced

1/2 cup plum tomatoes, seeded and chopped 1-2 tsps. minced jalapeno

peppers, depending on the heat you prefer 1 garlic clove, minced 1

tsp. chili powder 1 15 oz. can kidney beans, rinsed and drained 1/4 cup

breadcrumbs 2 Tblspns. your favorite BBQ sauce 1 egg white, beaten

4 whole grain buns toasted. Garnish with lettuce, tomato, onion slices,

cheese, avocado slices, etc. Heat oil in skillet over medium heat, add

onion, tomato, jalapeno, garlic and chili powder, saute 5 minutes. Cool

slightly. Using a fork, mash beans coarsely in bowl. Combine mashed beans

with onion mixture, add breadcrumbs, 2 tablespoons BBQ sauce, and egg white.

Stir to blend well. Shape mixture in 4 patties and lay on waxed paper and cover

with foil. You can refrigerate these for 1-3 hrs so flavors blend. If they

look like they will crumble, that's normal.

they will really hold together and cook up into a nice burger so don't worry

you made them correctly. If grilling, oil your rack with non-stick spray and

fire up the coals. If pan frying heat a little oil over medium heat and place

in pan. Cook about 3 mins. on each side. Watch so they don't burn. Place on

buns and garnish.
