Guest guest Posted May 17, 2006 Report Share Posted May 17, 2006 Barley Pine Nut Casserole 2 medium onion, chopped 2 cup pearl barley 1 cup pine nuts or chopped almonds 1/2 cup butter 1 cup chopped fresh parsley 8 green onions, thinly sliced salt and pepper 6 cups vegetable broth 1/2 tsp dried thyme Combine onion, barley, pine nuts or chopped almonds and butter in a frying pan. Cook and stir until onions are soft. Stir in parsley, green onions and salt and pepper. Transfer to a 2 quart baking dish. Add broth. Bake, uncovered , at 350 degrees for about 1 hour and 15 minutes, until the barley is tender and broth is absorbed.
