Zippy White Chili 1 small onion, finely chopped 1 tsp olive oil 1 3/4 cups low-sodium vegetable broth 1 can (4 oz) chopped green chilies 1/2 tsp Cajun seasoning 1/2 tsp garlic powder 1/2 tsp dried oregano 1/2 tsp ground cumin 2 Tbs minced fresh cilantro 1/8 to 1/4 tsp cayenne pepper 2 cans (15 oz each) white kidney or cannelini beans, rinsed and drained* In a saucepan, saute onion in the olive oil until just tender. Stir in broth, chilies, Cajun spice, garlic powder, oregano, cumin, cilantro and cayenne. Bring to a boil. Reduce heat and simmer, uncovered, for 30 minutes. Stir in beans; cook 10 minutes longer. Serve over rice or tortilla chips if desired.
