Guest guest Posted May 16, 2006 Report Share Posted May 16, 2006 Fusilli, Goat Cheese and Tomato Salad This is nice hot or cold. 8 to 10 plum tomatoes, unpeeled 1/2 cup loosely packed basil leaves, coarsely chopped 3 tablespoons sliced black olives 2 tablespoons extra virgin olive oil 2 tablespoons balsamic vinegar 3 ozs. crumbled lower-fat goat cheese 3/4 pound fusilli salt and freshly ground pepper Using a food processor, coarsely chop tomatoes Place in a large bowl. Stir in basil, olives, oil, vinegar and cheese. Set aside. Cook pasta according to package instructions. Drain and toss with tomato mixture. Season to taste with salt and pepper. Makes 8 servings.
