Hi Diedre :-),

 

I can appreciate the struggle with meat-eating loved ones. I'm the only

vegetarian in my entire family, LOL. When it comes to food, we share what we

can,

and try to tolerate each others' eating habits as best we can, LOL.

 

This recipe sounds very delicious, I will have to try it sometime. Thanks!

Greetings all!

 

My name is Deidre, and I am currently transitioning into vegtarianism.

 

I'm 29 years old, It's an idea I've toyed with for many years, and just

recently decided to implement. I am married, and my husband is a meat-

eater. I wouldn't go so far as to say " rabid, " but the idea of a

meatless meal is a foreign one to him. Being born and raised in the

South is probably a big part of his mindset.

 

Needless to say, I joined because I need GREAT meal ideas.

 

I made this dish last night, and my hubby and I both just loved it!

Hope you all enjoy!

 

1/4 cup olive oil

1 cup onion, diced

1/2 tsp ginger

1/2 tsp red pepper flakes

5-6 medium potatoes, peeled and diced

1 cup frozen peas

2 small tomatoes, diced

1 tsp salt

1/2 tsp ground turmeric

1/4 tsp cumin

 

 

Saute the onions in the olive oil over medium heat in a mediumsixed

pan until brown. Add the spices and potatoes. Stir until coated and

cover pan. Cook approx. 10 minutes, stirring occasionally to prevent

sticking. Add the tomatoes and peas, cover pan, and cook another 10

minutes or until the potatoes are tender.

 

This dish would also be very good with basmati rice instead of

potatoes, or with additional vegatables.

Hi, Deidre! My hubby was born and raised in AL. He has traveled a lot

in the Navy though I do have a little easier time - he eats anything

pretty much! Anyway, one of his favorites is Red Beans & Rice, which

I make for him most every Monday (apparently Monday is red beans &

rice, and laundry, day in New Orleans, where he spent 5 years).

Another of his favorites is the Santa Fe Stew that is in the recipe files.
