Guest guest Posted May 16, 2006 Report Share Posted May 16, 2006 Alright, last night I had to go in search umeboshi paste. Fortunately, I found it at the second store I went to. The first recipe from uncheese that I tried was herbed boursin cheese spread. I picked it for a few reasons. 1. Simple 2. I liked and recognized everything in it (except for umeboshi) 3. It was the first recipe that caught my eye (I think it may actually be the first recipe in the book too, lol) At the moment, I haven't had time to post to my blog...so no picture yet. My review: Well, I like it. Very herby and kind of cheesy. I had some on crackers this morning and it was great. Also dipped a few carrot sticks in it, but wasn't a fan of the carrots with it. I can't compare to real boursin cheese as I am not sure I've ever tried boursin. Tonight I can post the recipe for you all. Basically, just dump white beans, umeboshi paste, garlic, olive oil, and a bunch of dried herbs into the food processor. I cut the olive oil in half and used some soy milk as suggested in the forward of the book. At the store I also grabbed great northern beans instead of canneloni or regular white beans. The northerns worked fine. Unrelated stuff for all you New Englanders. I'm in Massachusetts, but travel around Maine/Mass/Ct/NY and soon RI for work. The cabin in Maine sounds great! For those of you in Massachusetts... On the 21st, I will be doing the Walk For Animals at Borderland State Park in Easton. (to benfit the Neponset Valley Humane Society) It is a nice 3 mile walk.
