I suggest taking a little extra time and making it like we have always done. It's so much better. Very colorful salad and if you want even more color, use 1/2 head green cabbage and 1/2 head of the purple cabbage. I always toss some poppy seeds into the dressing and you can use 1/2 orange bell pepper too. Swedish Salad (Svenske Sallad) 1 med. head cabbage, shredded finely 1/2 red bell pepper, julienned 1/2 green bell pepper, julienned 1/2 yellow bell pepper, julienned 2 celery stalks, finely chopped 2 green onions, chopped and include the tops 1 can pickled or unpickled beets, drained & julienned 1 cucumber, grated or finely chopped 2 carrots, peeled and shredded (Optional) 2 hard boiled eggs, chopped Mix all together and chill until ready to toss with salad dressing and serve. Dressing 1/2 cup sugar 1/4 cup white vinegar 1/3 cup canola oil 1/2 cup ketchup 1/3 cup boiling water 1 tablespoon minced onion 1 teaspoon salt dash of black pepper Pour the boiling water over sugar and stir until dissolved. Let cool for a few moments and add balance of ingredients and mix well, you can place all in a jar and shake. Chill and toss with salad before ready to serve.
