Guest guest Posted May 15, 2006 Report Share Posted May 15, 2006 Hi Val, When I get a new head of lettuce I wrap it loosely in paper towels and put it in a plastic shopping bag, not a produce bag. I've had it stay fresh up to 2 weeks. You can dry and reuse the paper towels for the next lettuce. I wash mine and spin dry very thoroughly. Lay out on a clean kitchen towel and roll up like a jelly roll. I used to put it in a plastic grocery bag, which worked well, but now I use an airtight plastic box. Works better for me. Whole foods are foods that are processed as little as possible; for example, buying a potato and cooking it, rather than buying instant mashed potatoes in a box. Raw foods are a subset of whole foods, with the caveat that there is no cooking involved. Some proponents allow heat treatment up to about 180* (such as in a dehydrator), but temps above that supposedly kill the live enzymes in the food.
