I just us subs. or leave it out. I have made many meal and dessert recipes out of this cookbook, I also rely more of the group files since I know they are TNT, nothing worse than a recipe from a cookbook that costs a lot to make , takes up time and doesn't turn out. Here's one that always has a quick meal in it, " The Vegetarian 5- Ingredient Gourmet " by Nava Atlas.
