Guest guest Posted May 15, 2006 Report Share Posted May 15, 2006 Mint Pesto For Pasta 1 cup packed mint leaves 1/2 cup fresh parsley 2 cloves garlic 2 tablespoons grated fat-free Parmesan cheese 2 tablespoons walnuts 2 tablespoons olive oil 2 to 3 tablespoons vegetable broth salt and pepper to taste 8 cups cooked pasta Combine all ingredients except vegetable broth and pasta in a blender or food processor and process until smooth. Gradually add enough vegetable broth to make a paste. Toss with hot pasta and serve. Serves 8.
