Brown Rice Tabbouleh

 

3 cups cooked long grain brown rice

3/4 cup chopped fresh parsley

3/4 cup diced peeled cucumber

3/4 cup diced ripe tomatoes

1/4 cup chopped mint leaves

1/4 cup extra virgin olive oil

1/4 cup fresh lemon juice

1 tsp sea salt, to taste

1 tsp freshly ground black pepper

1/3 cup pine nuts

feta cheese crumbles, optional

 

In a large bowl, combine the brown rice, parsley, cucumber, tomato,

mint, olive oil, lemon juice, sea salt, ground pepper and pine nuts.

Toss well to combine, cover, and chill until serving. Sprinkle with

feta cheese crumbles.

 

Serve with fresh lemony hummus, a green salad or fruit salad
