Guest guest Posted May 14, 2006 Report Share Posted May 14, 2006 Brown Rice, Barley, Parsley Dish 3/4 cup pearl barley 3/4 cup brown rice 1/2 cup hot vegetable stock 1/2 cup red onion, chopped 1 cup fresh parsley, chopped salt, pepper to taste Cook barley in 3 cups boiling water for 30 minutes or until tender; drain. In another saucepan, bring 2 cups water to a boil. Add rice, cover and simmer for 30 minutes or until rice is tender and water has been absorbed. In 6 cup casserole, combine rice, barley, stock, onion, parsley, salt and pepper to taste. Bake in preheated 350 degree oven for 20 minutes or until heated through. Serves 8.
