Chappati

 

2 1/2 cups ww flour

1 cup water

 

Put flour in bowl and make hole in center. Pour water in center.

Mix with fingers. Keep mixing until it makes a ball. It should have the

consistency of bread dough. We call it " Baby Butt Bread " . That

describes the consistency - firm but pliable. If not, add a little flour or

water accordingly. Take another bowl and fill with flour for flouring

rolling surface. Make a ball roughly a little bigger than a golf ball.

Roll out dough by turning after every roll or two so the dough makes a

round shape about 7 inches in diameter.

The dough is about 1/16 inch in thickness. Don't get it too thick.

A gas stove is best. If not use electric. heat electric to highest

temp. I use cast iron griddle or a very big cast iron pan. Griddle is

usually best.

 

Electric method.

 

Put chappati dough on griddle and wait until it bubbles up all over.

Turn over with pancake turner. Brown on the other side but do not

burn.. It is best to have help. One person cooking and other person

stacking them on a plate. Maybe it is not necessary because we had 4

burners on at once. Put chappati on plate. Unwrap one stick of butter half

way. Hold unwrapped end and butter chappati as soon as it comes off

griddle.

 

Gas method

 

Put chappati dough on griddle. Leave it on until it starts to get

stiff. Already have another burner on fairly high. Put stiff chappati

on open gas flame and it will puff up. If it comes out good, it will

pufff up like a balloon. As soon as it puffs turn over and let it get a

little brown on the other side. Put on plate and butter it.
