Guest guest Posted May 14, 2006 Report Share Posted May 14, 2006 Sweet and Sour Pasta Salad 8 ounces uncooked small, bit-sized pasta 2 cups broccoli florets 2/3 cup shredded carrots 1 medium red delicious apple, cored, seeded and chopped 1/3 cup plain nonfat yogurt 1/3 cup apple juice 3 tablespoons cider vinegar 1 tablespoon olive oil 1 tablespoon Dijon mustard 1 teaspoon honey 1/2 teaspoon dried thyme Cook pasta according to package directions without salt or oil. Add broccoli during the last 2 minutes of cooking. Drain and rinse well under cold water. Place pasta, broccoli, carrots and apple in a medium bowl and mix well. Combine remaining ingredients in a small bowl and mix well. Pour dressing over pasta mixture and toss to coat. Refrigerate at least 2 hours. serves 6.
