I've been a lurker and would like to jump

into the group and share a recipe.

Enjoying all the posts, Gene

 

 

Orange Herbed Pesto

 

4 cloves fresh garlic

2 cups fresh basil leaves

1 cup parsley leaves or cilantro

½ cup fresh chives

2 cups orange juice reduced to 1 cup

2 Tbsp. olive oil

3 Tbsp. toasted pine nuts

¼ cup fresh grated Parmesan

1 lb. dry linguini or spaghetti

salt and pepper to taste

chopped red tomatoes (optional)

 

In bowl of food processor blend garlic until chopped.

Add basil, parsley and chives and process until paste

is formed.

Add reduced orange Juice, oil, pine nuts and cheese

and process enough to blend well.

Season with salt and pepper and reserve.

Prepare pasta according to package instructions.

Drain well and toss with reserved pesto sauce to coat

well.

Serve garnished with chopped tomatoes and extra

cheese, if desired.

Glad you posted this, I enjoy anything with orange flavor.

I'm not big on basil pesto so this will be in my hurry and try folder.
