Red Cabbage and Apple With Beer

 

1 medium head red cabbage, shredded 1/2 cup red wine vinegar up to 3/4 2

granny smith apples, peel, core, slice 1/2 cup sugar 3/4 cup water 1 medium

onion, diced 1/4 cup butter 1/2 cup beer, up to 3/4 1 small bay leaf 1 pinch

cinnamon 1 pinch ground cloves 1 pinch allspice salt and pepper to taste

 

Place all ingredients in a covered pot and bring to a boil. Reduce heat and

cook slowly for about an hour. Taste and adjust seasonings.

If there's too much liquid, uncover and cook until most of the liquid is

evaporated.
