Two Mustard Marinade

I used this last night to marinade tofu slices, zucchini slices and

quartered button mushrooms. Soaked them for about 4 hours then

baked at 425 degrees for 30-35 minutes. Served it all over brown

rice. Its sort of a sweet and sour thing, but not too sweet in

general.

 

Two Mustard marinade

 

1/2 c olive oil

1/2 c white or apple cider vinegar

3 tbsp sugar

1 tbsp honey mustard

1 tsp whole grain mustard

1/4 tsp fresh ground pepper

1 tsp soy sauce

1/4 tsp paprika

1/2 tsp italian seasoning or a mix of basil, rosemary, sage and

thyme.

salt to taste (i didn't add any)

 

Whisk all ingredients together until sugar is dissolved and mustards

are evenly distributed. Pour over whatever you want to marinate and

let sit for at least 2 hours, stirring to recoat often.
