As a child i also ate the sour stalks raw and i also remember my Grams warning me over and over not to eat the poisonous leaves ~ she also cautioned me not to eat too many raw stalks claiming i would be stuck in the bathroom the next day if i ate too many! Here is one of her best snack cake recipes she made every year when the rhubarb was plentiful. Rhubarb Snack Cake 1 1/2 cup sugar 1/2 cup butter or margarine 2 eggs 1/3 cup milk 2 cups flour 1 tsp. baking soda 1 tsp. cinnamon 1/4 tsp. ground cloves 1/4 tsp. allspice 1/4 tsp. salt 2 cups chopped rhubarb Cream together the sugar and butter. Beat in eggs and milk. Stir in the dry ingredients. Fold in the chopped rhubarb. Spread in a greased 13 x 9 inch pan. Sprinkle the top with a dusting of cinnamon and sugar.
