Guest guest Posted May 9, 2006 Report Share Posted May 9, 2006 hello everyone...one of my favorite eggplant dishes follows. it is a big hit at potlucks. 2 eggplants 1 onion diced very small 2 or 3 cloves of garlic minced 2 or 3 tablespoons lemon juice 3 or 4 tablespoons olive oil ( i don't measure..i just pour, you want the lemon juice and olive oil mixture to resemble a oil and vinegar salad dressing) 1/2 to 1 teaspoon sugar salt and pepper to taste. pierce skin of eggplant a couple times...bake in oven at 350 or on your bbq. (if on bbq turn once in a while)...bake till the eggplant is very done. do not peel or cut open the eggplant. let the eggplant cool completely. (important to do) slice each eggplant open and scoop out the inners..including juices and hand chop till very fine and mushy...do not use a processor for this dish... add remaining ingredients....lovely served room temp or cold...with vegies and crackers.
