I made these are they were delicious. I used maple syrup in place of the honey.

I really appreciate a recipe usimg millet. I don't use it often. It can be

kind of funky to cook with, most of the time it absorbs too much of the liquid,

it's very dry or I never season it properly and it's so blah.

Millet Muffins

2 1/4 c. freshly milled flour(hard red wheat) or King Arthur Brand Whole

Wheat Flour

1 tsp. Salt

1 tsp. Baking Soda

1 tsp. Baking Pwd.

1/4 c. whole Millet

1 c. Buttermilk

1 egg

1/2 c. Oil

1/2 c. Honey

 

Mix together the dry ingredients. Add liquids and mix until well blended.

Drop by spoonfuls into greased Muffin Tins. Bake at 400 degrees for 15

minutes.

You're welcome. I'm glad you enjoyed the muffins also. I'll have to try it

with the Maple Syrup. Good idea for even more flavor. Did you like the little

crunch the millet gave them? I love crunch in lots of foods I eat. LOL
