Guest guest Posted May 9, 2006 Report Share Posted May 9, 2006 I made these are they were delicious. I used maple syrup in place of the honey. I really appreciate a recipe usimg millet. I don't use it often. It can be kind of funky to cook with, most of the time it absorbs too much of the liquid, it's very dry or I never season it properly and it's so blah. Donna Millet Muffins 2 1/4 c. freshly milled flour(hard red wheat) or King Arthur Brand Whole Wheat Flour 1 tsp. Salt 1 tsp. Baking Soda 1 tsp. Baking Pwd. 1/4 c. whole Millet 1 c. Buttermilk 1 egg 1/2 c. Oil 1/2 c. Honey Mix together the dry ingredients. Add liquids and mix until well blended. Drop by spoonfuls into greased Muffin Tins. Bake at 400 degrees for 15 minutes. Did you like the little crunch the millet gave them? I love crunch in lots of foods I eat.
