Guest guest Posted May 9, 2006 Report Share Posted May 9, 2006 I grew up on this and it came from one of Mom's old cookbooks with the cover torn off and 1/3 of the pages missing. I have bits and pieces of the book. Zena Irish Tomato Soup 4 tbls. butter or margarine 2 yellow onions, chopped 1 carrot, pelled and chopped 2 russets, peeled and chopped 2 cups vegetable broth 8 plum tomatoes, blanch & peel & processed 1 1/2 tbls. fresh chopped basil leaves salt & pepper to taste 2 cups lowfat milk, or unsweetened soy milk Melt butter in soup pot, add onions and carrot and cook for 5 minutes. Add potatoes and stir. Run tomatoes through the blender or food processor nowadays for 10 seconds. Add broth and tomatoes to mixture and bring to a boil and simmer on very low for 1 hour. Add basil, salt and papper to taste and milk. Heat for 5 minutes and serve. This is good on a cold day with a sadnwich or a good quality crusty roll. Mail goes everywhere you do.
