I found out about this group on another site yesterday, so popped by to see what it's all about. So far, I like what I see! I look forward to reading new recipes, and sharing some of my own! Here's a recipe from one of my favourite vegetarian restaurants in Victoria, Rebar Modern Food: ~Blue Corn Wild Rice Waffles~ **Note that since I don't have a waffle iron, I make these as pancakes :)They are great for both for both breakfast and dinner, depending on what you serve them with. Ingredients: 1 cup blue cornmeal (240 ml) - use yellow cornmeal if blue isn't available 1/2 cup unbleached flour (120 ml) 2 tsp baking powder (10 ml) [optional: 1 to 2 tbsp white or brown sugar (15-30 ml)] 1/2 tsp salt (2.5 ml) 1 & 1/2 cups buttermilk (360 ml) 1/4 cup plain yogourt (60 ml) 2 eggs, lightly beaten 3 tbsp melted butter (45 ml) 1 cup cooked wild rice (240 ml) Directions: Mix together the dry ingredients in a small bowl. In another bowl, whisk together the buttermilk, yogourt, eggs and melted butter. Gently mix the wet and dry together until just combined. Fold in the wild rice and let the batter rest while you heat up your waffle iron. Make your waffles as directed by your waffle iron instructions. ***For pancakes, let the batter rest a few minutes while you heat up a non-stick skillet or lightly oiled fry pan. Pour in about a 1/4 cup of batter and let cook until bubbles form on the top and pancake is golden underneath. Then flip and fry until golden brown on the other side. Garnish with your favourite syrup and fruit toppings. ***For dinner, serve with with a good salsa, sour cream, refritos and/or baked yams for a meal with southwest style.
