Besides I refuse to call any cookbook younger than me 'old' lol. This is from the Chinese Village Cookbook - A Practical Guide to Cantonese Cooking by Rhoda Yee 1975. original recipe calls for b**f but we subbed Morningstar's Steak Strips. Could also use gluten or tofu. Marinade: 1 Tbs cornstarch 1 tsp sugar 1/2 tsp salt 1/2 tsp sherry 2 Tbs light soy sauce Ingredients: 1 medium onion, cut into wedges 1 medium green pepper, in 1-inch chunks 1/4 tsp salt (we didn't add this) 1 Tbs veg stock 2 cloves garlic, crushed 4 Tbsp oyster sauce 3 Tbsp oil (we used just over 1) Wait until just before adding the steak strips to dip them in the marinade or they get a little mushy. Stir fry onion and green pepper in 1T oil. Add salt and stock and stir fry until liquid has evaporated. Set aside in a bowl. Brown garlic in same hot pan, discard and then add steak strips (or gluten or tofu). Mix well. Return vegetables to pan, stir and heat through.
