Guest guest Posted May 7, 2006 Report Share Posted May 7, 2006 I love fava beans both to eat and as a gardener. They make a great winter cover crop in our mild climate on the California coast. Then, in the spring, we have lots of fava beans that we can harvest. Kathleen Eureka CA > Fava Bean Onion Mash > > 2 lbs. fresh fava beans (in pods) > 1 yellow onion, chopped coarsely > 6 cloves garlic, peeled > salt and pepper to taste > > Shell the beans (it's time-consuming, but well worth > it). Place the beans, onion and garlic in a saucepan > with enough water, just to cover them. Bring to a > boil, then turn down the heat and simmer until the > beans are tender, about 15 to 20 minutes. > Pour entire contents of the pot into a food > processor/blender and puree. If it seems watery, > pour the puree back into the saucepan and heat again > until some of the excess water has cooked off. > Season with salt and pepper.
