Green Beans with Sesame Dressing

 

I am finally able to get her TV show now..I have been saving and using her

recipes for awhile, she is not a purest but she has some good recipes. This is

adapted from Madhur Jaffrey from Far Eastern Cookery.

 

12 ozs. green beans, trimmed and cut into 4cm/1½in lengths

1 tbsp. salt

1 cup Japanese soup stock or vegetable stock at room temperature, lightly salted

to taste

2 1/2 tbsps. sesame seeds

1 1/2 tbsps. japanese soy sauce

1 tbsp. mirin or 1 1/2 tsps. sugar dissolved in 1 1/2 tsps. of the above stock

Bring a large pan of water to a rolling boil. Add 1 tbsp salt, then add the

beans. Boil rapidly for 2 to 5 minutes or until the beans are just tender but

still crisp. Drain and quickly plunge them into cold water to set the colour.

Drain again and put the beans into a bowl. Pour the stock over them and set

aside for 30 mintues longer. Now prepare the dressing. Put the sesame seeds in a

small cast-iron frying pan set over a medium-high heat. Stir the seeds about for

a few minutes until they are roasted and give out a nutty aroma.

Reserve about 1/2 tbsp of the seeds for garnishing the dish. Grind the rest in a

clean coffee grinder, then empty them into a bowl.

Add the soy sauce, mirin and 1 tbsp stock taken from the soaking beans. (If you

are using sugar and stock instead of mirin, just take another 1 1/2 tsp of stock

from the beans.) Mix well.

Drain the beans thoroughly, put them into a bowl, add the dressing and mix.

To serve, Japanese-style, pile the beans in a little hillock in the centre of

each of 4 small bowls or plates. Sprinkle the reserved roasted sesame seeds over

the top or each serving. Serves 4.

Thanks for this recipe - I finally bought mirin (ok, so I shoulda had it sooner

but I really

couldn't find it) - and it's nice to have more than one recipe in which it could

be used. This

very nice green bean recipe would enhance any meal, I think.
