Guest guest Posted May 7, 2006 Report Share Posted May 7, 2006 Fava Bean Onion Mash 2 lbs. fresh fava beans (in pods) 1 yellow onion, chopped coarsely 6 cloves garlic, peeled salt and pepper to taste Shell the beans (it's time-consuming, but well worth it). Place the beans, onion and garlic in a saucepan with enough water, just to cover them. Bring to a boil, then turn down the heat and simmer until the beans are tender, about 15 to 20 minutes. Pour entire contents of the pot into a food processor/blender and puree. If it seems watery, pour the puree back into the saucepan and heat again until some of the excess water has cooked off.
