Fava Bean Onion Mash

 

2 lbs. fresh fava beans (in pods)

1 yellow onion, chopped coarsely

6 cloves garlic, peeled

salt and pepper to taste

 

Shell the beans (it's time-consuming, but well worth it). Place the beans, onion

and garlic in a saucepan with enough water, just to cover them. Bring to a boil,

then turn down the heat and simmer until the beans are tender, about 15 to 20

minutes.

Pour entire contents of the pot into a food processor/blender and puree. If it

seems watery, pour the puree back into the saucepan and heat again until some of

the excess water has cooked off.

Season with salt and pepper. Serve with toasted pita chips or crackers.

Makes 4 servings.
