No spell check and a number of other problems. Good the group is back up and running today, I agree with Wee, what a special group. Cipolle al Balsamico (onions in balsamic vinegar) 1 pound of small young onions 5 to 8 sage leaves 3 tablespoons olive oil 1/4 cup balsamic vinegar 3 1/2 tablespoons dry red wine 2 teaspoons of honey or maple sugar 1 dried red chile (optional) salt and fresh ground black pepper Peel onions and half lengthwise, then quarter. Rinse sage and pull off leaves and cut into thin strips. Heat oil in a skillet, stir in onions and sage and saute for 2 minutes. Combine balsamic vinegar, red wine and 1/4 cup water, to the onions and sage along with the honey and the whole dried chile. Mix and season with salt and pepper. Simmer over mediun heat for about 3 to 5 minutes, then remove the chile and simmer for another 5 minutes. Transfer everything to a bowl along with any remaining liquid.
