In the Indian-Middle Eastern recipe folder is one of my very favorite recipes. It's " Persian Rice and Lentils with a Tahdeeg " last year PT sent me the recipe off list because it sounded good, I told her it sure did and I would be willing to try it so we could get it posted and it's delicious. I also bought the same cookbook she has, got it for dirty cheap used on Amazon.com The recipe came from Vegetarian and Vegetable Cooking " by Christine Ingram. I find this recipe assembles fast, I place all the ingredients out in front of me at one time and it goes with the flow. Now when you wrap the pan with a dish towel, that's hysterical to see in my eyes.
