First, only pick roses that are unsprayed and are not chemically contaminated. It is best to wear latex gloves to protect your hands from thorns. If not, then wash your hands well before picking. Pick rose petals and put them in a clean glass jar. After picking them, cover the petals with honey. Keep them in a dark place for one year. The next year this can be eaten like a marmelade.
