Guest guest Posted May 5, 2006 Report Share Posted May 5, 2006 Sweet Onion Bread 3/4 cup chopped sweet onion 1 1/2 cups flour 1/4 cup chopped fresh chives 2 tbsps. sugar 2 tsps. baking powder 1/2 tsp. salt 1/4 tsp. baking soda 1 egg slightly beaten 1/4 cup oil 1 cup buttermilk Pre-heat the oven to 375 degrees. Lightly grease an 8 to 9 inch bread pan. Combine flour, chives, sugar, baking powder, salt, and baking soda in a large bowl and set aside. Saute onion in small skillet coated with nonstick spray until crisp. Combine cooked onions, egg, oil, buttermilk, in a small bowl and mix well. Blend both mixtures together thoroughly and pour into the greased pan. Bake at 375 degrees for about 17 to 22 minutes or until a toothpick inserted into center comes out clean. Serve warm.
