These are wonderful homemade crackers. They can be made

into shapes if you want or into larger flat crackers to use for

an open-faced sandwich base. Great for taking on picnics in

the park. :)

Cheesy Sun Crisps

2 cups shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup butter softened

3 Tbs water

1 cup flour

1/4 tsp salt

1 cup quick cooking oats

2/3 cup roasted salted sunflower seeds

In a mixing bowl, combine the cheddar and parmesan

cheese, butter and water until mixed well.

Combine the flour and salt and add to the cheese mixture.

Stir in the oats and the sunflower kernals.

Knead until the dough holds together.

Shape into a 12 inch long roll.

Cover with plastic wrap and chill for 4 hours or overnight.

Allow to stand at room temperature for 10 minutes before

cutting into 1/8 inch slices.

Place on a greased foil lined baking sheets.

Bake at 400 for 8-10 minutes or until the edges are golden

brown.

Slide crackers off baking sheets to wire racks to cool.

Yield: 8 dozen approx.

Be kind and tender to the Frog,

And do not call him names,

As " Slimy skin, " or " Polly-wog, "

Or likewise " Ugly James, "

Or " Gap-a-grin, " or " Toad-gone-wrong, "

Or " Bill Bandy-knees " :

The Frog is justly sensitive

To epithets like these.

No animal will more repay

A treatment kind and fair;

At least so lonely people say

Who keep a frog (and, by the way,

They are extremely rare).

~ a poem by Hillare Belloc entitled 'The Frog'
