Guest guest Posted May 4, 2006 Report Share Posted May 4, 2006 Stuffed Spinach a few full spinach leaves oil for sauteing 1 onion, finely chopped 1 green chilli, finely chopped, mild or hot 1 tsp. garam masala 1 capsicum, finely chopped 2 pieces baby corn, finely chopped 1 tomato, deseeded and finely chopped a few springs coriander, finely chopped salt to taste a few teaspoons besan, mixed with water to make a paste Heat the oil in a pan and sauté the onions, add the chopped green chilli and garam masala powder. Stir for two minutes before adding the capsicum, baby corn and tomato. Mix well and remove from heat. Mix in the coriander and salt. Set this stuffing aside. Wash and wipe a few large spinach leaves. Place a portion of the stuffing mixture on one big leaf or in between two smaller leaves and roll. Seal with the besan paste. Repeat till all the stuffing mixture is used up. Steam the rolls for only two minutes and remove them before the spinach changes colour. Serve on a bed of salad. Love cheap thrills?
