Guest guest Posted May 2, 2006 Report Share Posted May 2, 2006 Tarragon and Vinegar Beets 1 bunch beets 2 teaspoons dried crushed tarragon 1 tablespoon unsalted butter, cut into small chunks 1 teaspoon cider vinegar 1/4 teaspoon sugar Peel beets and cut in half lengthwise. Slice beets into 1/4 inch slices and steam until tender, about 10 to 12 minutes. Remove from steamer and add remaining ingredients. Toss ingredients until butter has melted.
