Guest guest Posted May 2, 2006 Report Share Posted May 2, 2006 Pamesan Potato Puffs 2 medium baking potatoes, peeled and cubed 1/4 cup parmesan cheese 2 tablespoons soy milk 1/8 teaspoon salt 1/8 teaspoon ground white pepper 1/8 teaspoon ground nutmeg 1/4 cup egg substitute 1 tablespoon parmesan cheese Cover potatoes with water and heat to boiling. Boil for 30 minutes or until tender. Drain and mash potatoes. Add 1/4-cup Parmesan cheese and next 4 ingredients and beat with an electric mixer until smooth. Stir in egg substitute. Use a pastry bag or spoon to form 6 mounds of potatoes on a baking sheet sprayed with nonstick cooking spray. Sprinkle with remaining Parmesan cheese and bake at 350 degrees for 25 to 30 minutes or until lightly browned. serves 6. Blab-away for as little as 1¢/min.
