Guest guest Posted May 2, 2006 Report Share Posted May 2, 2006 Veggie Bacon Appetizers 8 to 10 slices veg bacon 1 cup chopped lettuce 1 clove garlic, minced 1/4 tsp. ground pepper 2 small loaves French bread (16 oz.) 3 to 4 roma tomatoes, seeded and chopped 2 tbsps. chopped fresh basil leaves 1/4 tsp. salt 1/3 cup olive oil Cut French bread in 1/4-inch slices. Brush olive oil on both sides of bread slices; place on baking sheet. Bake at 400 degrees until crisp and golden brown. Allow to cool. Cook bacon until crisp. When cool, break bacon into small pieces. In medium bowl, stir together the rest of the ingredients to make topping. Spoon about 1 teaspoon of the topping on each toast round. Makes 24 appetizers.
