Guest guest Posted May 1, 2006 Report Share Posted May 1, 2006 " Tropical Brown Rice Salad " 3 cups cooked brown rice, cooled 1/2 cup chopped papaya or mango 4 tablespoons chopped black olives 2 tablespoons chopped chives or green onion tops 1 tablespoon olive oil 2 tablespoons balsamic vinegar 3 tablespoons slivered toasted almonds In large bowl combine all ingredients and mix. Chill. When ready to serve line a large bowl with lettuce leaves and fill with salad. Garnish with slices of papaya around the edges if desired. Blab-away for as little as 1¢/min.
