Guest guest Posted April 30, 2006 Report Share Posted April 30, 2006 I made these for lunch today and the kids loved them, I used cheddar cheese and I had leftover mashed potatoes which I warmed in the micro wave. I used Yves jumbo veggie dogs Trina ate 2, Ryan ate 2, I ate 2 and now I have 2 leftover for lunch tomorrow, I'm a big kid lol Thanks Donna Great recipe. Easy, quick and the kids can help. AJ Donna's " Covered Dogs " 8 tofu dogs 2 cups of seasoned fresh mashed potatoes (I sprinkle Mrs. Dash on mine) 1 cup sour cream or 1 cup of grated cheddar cheese 1/4 tsp. salt 1/4 cup chopped green onion with tops 1/4 tsp. paprika Split tofu dogs in half lengthwise but don't cut completely through. Open to flatten and place them in a glass casserole dish. Mound each tofu dog with 1/4 cup of seasoned mashed potatoes. Combine sour cream or grated cheese with green onion, salt and paprika.
