Guest guest Posted April 29, 2006 Report Share Posted April 29, 2006 Mushroom Walnut Pate by Akasha This was a restaurant recipe so you have ot get your slide rules out for this one. 32 cups mushrooms 1 cups walnuts 6 cups ricotta cheese 1 dups bread crumbs 2 onions 12 Tbsp. olive oil 12 Tbsp. butter 2 Tbsp. salt 2 Tbsp. black peppe 1 Tbsp. thyme 4 Tbsp. basil4 Tbsp. garlic 2 cups sour cream mixed in Cuisinart with12 Tbsp. Egg Replacer Wash mushrooms Pit on Cuisinart 4 cups a t a time and process until fine. Set Aside. Chop onions into quarters and process until chopped. Saute onions in butter and oil until clear. Add mushrooms and cook until mushrooms are cooked down and not raw. Process walnuts in Cuisinat until small but not powder. Mix ricoota, walnuts and bread crumbs. with sour creeam mixture and spices in large bowl. Add the cooked mushrooms and mix thoroughly. Butter Pate pans and fill pans. Cover with foil and bake at 400 degrees for 1 hour. Cool in refrigerator. Lasts at least 1 week. GB Love cheap thrills?
