Guest guest Posted April 29, 2006 Report Share Posted April 29, 2006 Hi Wee, The first time I saw TIA my thought was they were signing it Aunt (Tia in Spanish) If you use canned lotus root then it's already soft enough to chew? I have only used fresh. If it's soft enough to eat just slice it in 1/2-inch or 1/3-inch slices and set aside, now using a skillet make a nice thick caramelized syrup with some sauted minced garlic and finely chopped onions in butter, ghee, margarine or olive oil as they cook add some red pepper flakes, soy sauce and teriyaki sauce, little brown sugar. Get this sauce nice and thick. Add the lotus slices and cook on both sides making sure the syrup soaks in and coats them well and they turn dark. I have no exact measurements for this. If the canned lotus roots are not soft enough to chew then boil until a little more tender. When I serve these they are grabbed immediately, they are beautiful! I think the louts root has a gorgeous deisgn. I like to sprinkle toasted black sesame seeds over the top when I serve them. Hope this helped you. Let me know how you like them.
