Guest guest
Using this recipe as the theory, I put it into practice yesterday thusly: 1/4 C maple syrup 1/4 C peanut butter 1/4 C tahini* 3/4 C All-Bran cereal I used the directions as below and a glass loaf pan. They are quite good after refrigeration, perhaps not as crunchy as I expected, more toothy, but a good texture nevertheless. And they were *sweet*! I can hardly imagine how much more so with the full 1/2 C maple syrup in the original. For me, based on the ingredients above, I would say there are only 8 servings. Definitely an easy recipe and a keeper. I think it will be fun to experiment with different cereals and granolas. Thanks, -Erin www.zenpawn.com/vegblog * - I'm a big tahini fan and often use it to sub out some or all of the peanut butter in a recipe. More of an " adult " flavor, to be sure. , " AJ " <coolcook wrote: > > Maple Cereal Bars > > 1/2 cup maple syrup (or 1/4 cup corn syrup & 1/4 cup molasses) > 1/2 cup chunky peanut butter > 3 1/2 cups 0-shaped cereal such as Oatio's or Cheerios > 1/2 cup raisins, dried blueberries or other dried fruit (optional) > > Mix together syrup and peanut butter in a saucepan. Cook over low heat until peanut butter and syrup have melted. When mixture is smooth, add cereal, and stir to coat. You may also wish to embellish the recipe by adding dried fruit. > Press mixture into a lightly greased oblong pan, and let it cool. (You may need to refrigerate in order for it to harden.) When cool, cut into squares, and enjoy. > Makes about 24 squares.
