Guest guest Posted April 28, 2006 Report Share Posted April 28, 2006 Boca Omelet 1 frozen BOCA Meatless Breakfast Patty, chopped 1/2 cup torn fresh spinach leaves OR baby spinach leaves 1/4 cup cholesterol-free egg product OR 1 large egg, beaten 1 TB Athenos Crumbled Reduced Fat Feta Cheese 1 TB tomato, seeded and finely chopped Dash of fresh ground black pepper 1 large flour tortilla, sautéed crisp Spray small nonstick skillet with cooking spray. Add breakfast patty pieces; cook and stir on medium heat for 5 minutes, adding spinach for the last minute of the cooking time. Reduce heat to medium-low. Pour egg over spinach mixture; cover. Cook 2 to 3 minutes or until egg is set. Sprinkle evenly with cheese; cover. Remove from heat; let stand 2 minutes to allow cheese to melt slightly. Sprinkle with the tomato and pepper.
