Guest guest Posted April 27, 2006 Report Share Posted April 27, 2006 Gingered Mashed Sweet Potatoes I changed the recipe a little, but its was nice we had them for dinner. 4 to 5 large sweet potatoes or yams 1 inch piece of fresh ginger peeled and grated soy milk 2 tablespoons butter, I used soy margarine salt and pepper to taste Boil or bake sweet potatoes/yams until cooked through. Peel and cut into quarters and place in large bowl. Mash potatoes. Add ginger, butter and about 1/4 cup soy milk. Whip potatoes until fluffy adding more milk as needed. Add salt and pepper to taste.
