Guest guest Posted April 27, 2006 Report Share Posted April 27, 2006 Spinach Grapefruit Plate 2 pink grapefruits 2 teaspoons cumin 1 teaspoon salt 1 pound fresh spinach 1/2 cup olive oil 2 tablespoons balsamic vinegar 1 cup black olives dash red papper flakes Peel and seed grapefruits, separate into sections and remove skin and membrane. Cut into chunks. Transfer to a small bowl and toss with cumin, salt and red pepper flakes. Rinse spinach well under cold running water, make sure all the grit is removed. Tear off stems and pat dry, arrange spinach leaves on 4 individual salad bowls. In another small bowl, whisk balsamic vinegar with olive oil. To serve, spoon equal amounts of the grapefruit over spinach leaves and sprinkle with the dressing. Top with black olives. Serve this chilled. Talk is cheap. Use Messenger to make PC-to-Phone calls.
