These can be refrigerated or frozen and then reheated at party time.

 

Cheese and Spinach Nibbles

 

2 large eggs, or 1/2 cup egg substitute

6 tbsps. whole-wheat flour

1 10.oz. pkg. frozen, chopped spinach, thawed

2 cups low-fat cottage cheese

1/2 tsp. fresh ground black pepper

1/8 tsp. cayenne pepper

pinch nutmeg

3 tbsps. wheat germ

 

In a large bowl beat the eggs with the flour until the mixture is smooth.

Add the spinach, cheeses, cayenne, and nutmeg, and mix the ingredients well.

Pour mixture into a nonstick coated 13 x 9 x 2 -inch baking pan.

Sprinkle the top with wheat germ and bake at 350 degrees F for about 45 minutes.

Let stand for about 10 minutes and then cut into 1 & 1/2-inch squares for

serving. Servings 18.
