I made this last night from AJ's " Not TNT " folder,

wanted to share it here as well. It was orginally

posted in the folder by Donna. This is a keeper!

 

Aztec Couscous

 

from Lorna Sass Vegetarian cookbook

 

1 cup couscous

1/2 tsp cumin

1 tsp salt to taste

1 cup to 1 1/4 cups water

1 15 ounce can black beans, lightly drained

1 cup corn kernels

1/2 cup red onion, chopped

1/4 cup minced fresh cilantro

1 jalapeno, minced

3 tablespoons

roasted garlic oil (or saute garlic in oil)

3 tablespoons fresh squeezed lime juice

Place cumin, couscous and salt in a large heatproof bowl and pour

1 cup to 1 1/4 cups boiling water over it..

Cover tightly and let sit for

10 minutes until water is absorbed.

Add a little more water if needed and let

sit.

Fluff with fork.

Toss couscous with balance of ingredients and serve

warm or at room temp.
