Trying to cut down on the weight lazy vegetarianism put on (ie mass cheez it consumption) and so since 01/06 have been eating much better and exercising more. I work a 9 - 5 which is pretty uninspiring so I'm a bored/idle eater. Looking for main dishes I can make Sundays and spread out over the week. I've done an all veg lasagna, stuffed peppers/mushrooms, soups/stews (but since we're getting into warmer weather not so much on those) hummus and veggies, etc. I eat a minimal of grains and when I do they're whole (ezekiel breads/tortillas, vermont breads, brown rice, bulgur etc - but 1 - 2 servings a day, though i'll admit i got a soft spot for total cereal)i love nearly all veggies but oniony onions and love all cusines (though asian falls low on the list) i'm 23, in new jersey and working in the social services (but i hate nj and plan to move home to buffalo soon) xoxo niki Quote Link to comment Share on other sites More sharing options...

Also, I will often chop up veggies for teh week to make evening cooking easier. Anyway, last night I made (for the rest of the week) the tempeh choucroute garnie posted yesterday, the chipotle black bean burgers (will make the yogurt sauce tomorrow as that's when I plan to eat them), a lentil loaf, and a baked tofu. I often make a week's worth of brown basmati rice at a time, or quinoa.
