Guest guest Posted April 26, 2006 Report Share Posted April 26, 2006 My daughter got in trouble for dressing too outrageously punk-rock to school and had so many write-ups over it that for the last 2 weeks of her 8th grade year she was forced to leave school 1/2 days. Well, i thought they were just being intolerant idiots that were denying her right to be an individual [that's how i raise both my kids].... so i made her 1/2 days a celebration by packing fab-veggie picnic lunches. This wrap was one of our favs. She is 15 years old now but still has fond memories of all the easy recipes we tried together from out of this little kids cook cookbook trio we had given to us by my Grams. Rock on! Cucumber Wraps 1/2 cup plain or herbed spreadable cream cheese 4 whole wheat flour tortillas (8 inch size) 1 cucumber (6 inches long) quartered lengthwise Salt, sprinkle (optional) Pepper, sprinkle (optional) 1. Spread 2 Tbs. cream cheese with a knife on each tortilla. 2. Lay 1 cucumber spear on 1 edge of each tortilla. Sprinkle with the salt and pepper. Roll each tortilla around around the cucumber. Wrap tightly with plastic wrap. Chill for at least 1 hour. Makes 4 wraps. ~ pt ~ Oh Beautiful for smoggy skies, insecticided grain, For strip-mined mountain's majesty above the asphalt plain.
